Zucchini patties

Mucver (Mujwar) (Zucchini/Squash Veggie Patty)
Ingredients for Primal version:
4 mid-sized zucchinis
5 eggs
1/2 cup cassava grits
1/2 cup coconut flour
1 bunch spring onions (fresh onions)
1 bunch fresh dills
1 bunch fresh mint
(can replace anyone of these greens with parsley especially if they're sold in smaller quantities than bunches)
Organic virgin coconut oil for frying
Fresh ground salt crystals (rock, sea, or mineral)
Fresh ground black peppercorns
PS: I'm sure there are other combinations of Primal-friendly flours (such as almond flour, tapioca, etc) that would also work. If working with a different flour keep in mind that the amount needed can vary widely and you will have to see what the minimum amount for binding the shredded zucchini mix into patty form is needed. I tried the above version and it worked just fine.

4 mid-sized zucchinis (or 6 similar size squashes if squash has seeds)
3 eggs
3 turkish coffee cups = 3*20 ml= 60 ml = .25 US cups (quarter cup) = 45*3gr= 135 gr = 4.76 oz Flour
1 bunch spring onions (fresh onions)
1 bunch fresh dills
1 bunch fresh mint (can replace anyone of these with parsley especially if they're sold in smaller quantities than bunches)
Coconut (or vegetable) oil for frying
Salt and black pepper
How to Prepare
Scrape the skin of zucchinis/squashes w/ knife. (If squashes has a bed of seeds cut in half and clean out the bed of seeds.) Wash zucchinis/squashes and grate all of it. Strain the water of the grated zucchinis/squashes with a strainer (spaghetti strainer fine). Cut the fresh onions, dills and mint finely and mix well with the grated and strained zucchinis/squashes. Add the eggs, flour, salt and pepper to this mix and mix well until it becomes a batter. Pour some oil in a frying/teflon pan and make sure it's hot. This is not deep frying so pour barely more oil then you would need just to grease the pan, like when you're frying eggs. Keep the temperature at medium-high or high. Drop a large table spoon of the zucchini/squash batter on the oil, vaguely flatten with back of the spoon. A large pan may take upto 6 such drops at a time. When patties no longer liquid, flip the patties and make sure both sides are well cooked. Put a paper towel on a plate and place each fried patty on the paper towel. It may help to flip and remove patties in the order they were dropped in the pan to ensure they're not over or under cooked. Continue the process of dropping the zucchini mix in pan and flipping until both sides are fried until all mix is used. You may need to add a little bit of oil to the pan as you drop more patty mixes in the pan. You may place paper towels between layers of fried patties on the plate and on top to absorb extra oil. You may serve hot or cold (as an appetizer). You may serve with garlic yogurt (thinly minced garlic well mixed with plain yogurt) on the side or on top.
