Stuffed Peppers

Ingredients:
1 lb stew red meat or boneless/skinless chicken
24 Slices (~16 oz) Provolone Cheese or Goat Mozzarella
6 Large Red/Green/Yellow Bell Peppers (~2-2.5 lbs)
2 Medium Sweet Onion
10 oz. Baby Bella Mushrooms
2-4 Tbs. Butter
2-4 Tbs. Coconut Oil
2 Tbs.=6tsp Garlic – Minced
Fresh ground Salt crystals (rock, mineral or sea) – to taste
2 tsp. fresh ground black peppercorns
2 Tbs. pine nuts
2-3 tsp. dry or fresh mint
1/2 bunch parsley
optional: 1 Tbs. currant (recommend for red meat)
1 Tbs. basil
1/2 lemon-juiced (recommend for chicken)
1 tsp. cinnamon (recommend for chicken)
1 tsp raw local or wild honey
Directions

Slice peppers in half lengthwise, remove ribs and seeds.
Slice onions and mushrooms. Saute over medium heat with butter, olive oil, minced garlic and a little salt and pepper. Saute until onions and mushroom are nice and caramelized. About 25-30 minutes.
Preheat oven to 400*
Slice roast beef into thin strips and add to the onion/mushroom mixture. Allow to cook 5-10 minutes
Line the inside of each pepper with a slice of provolone cheese.
Fill each pepper with meat mixture until they are nearly overflowing.
Top each pepper with another slice of provolone cheese.
Bake for 15-20 minutes until the cheese on top is golden brown.

Makes 8 servings
Serving suggestion: Serve with goat yogurt and kimchi soup.
