Jacket potato
Kumpir
For the jacket potato:
Bammies (Jamaican Cassava bread) (soaked in coconut milk 30 mins and baked both sides each 15 mins)
or
Yam/sweet potato (Baked in whole for 20 minutes, then when soft enough to chop easily, bake in halves for another 20 minutes, you can bake in toaster oven)
For the insides:
Steam
40-50 baby carrots chopped
and 1 bag peas (~10 oz)
Hard-boil 2 eggs and use white
Chop
1 bunch dillweed
and 1 bunch Spring onion
and 1-2 mini cucumbers or 5-10pickles
Bake 10-15 sweet mini peppers
Fry 10-15 Button mushrooms
Goat yogurt or Coconut cream or sour cream (coconut milk will do)
Fresh ground S&p
Extra virgin olive oil
On the side or mix in:
Olive tapenade (make at home recipe: mix chopped green olives stuffed with red peppers and kalamata olives with capers and olive oil)
