Turkey Onion & Pepper

This one takes an hour to cook but the preparation is really easy and fast- ideal for the lazy nights for a good tasting nutritious dinner. Follow by a mix of berries. You can serve this with a salad on the side 

Ingredients:

1-3 lbs bone-in turkey
1-3 onions (red preferred, white and yellow works too)
2-4 whole bell peppers of your fave colors
coconut oil (organic extra virgin preferred) (or other natural fat)
olive oil (extra virgin)
Spices: fresh ground garlic flakes&salt crystals&black peppercorns
ground sage, thyme, rosemary. parsley flakes, sumac, oregano, mint, ground cumin, marjoram leaves. (you could replace spices with their fresh version too if you have them)

Directions:

Set oven to 450F.
Grease pan with virgin coconut oil.
Put your defrosted 1-3 lbs bone-in turkey skin up in the pan.
Sprinkle your turkey with some fresh ground garlic flakes&salt crystals&black peppercorns and throw in the oven.
Set your alarm to a total of 55-60 minutes.
Some time midway (perhaps about 30-40 minutes after throwing the turkey in the oven) turn the turkey upside down so both sides can be crispy.
10-20 minutes before removing the turkey (before alarm rings) throw on the same oven rack next to the pan, 1 to 3 quartered (or halved if they're small) peeled onions and 2-4 whole bell peppers of your favorite colors (red, orange, yellow...). About 5-10 minutes later turn them upside down once on the rack and leave them in for another 5-10 minutes.
Remove the turkey from oven when the skin looks really crispy. For instance if it wasn't defrosted well all the way inside, it may take an extra 10-20 minutes.

Now you've got the cooked turkey, onions and bell peppers.

Skin the bell peppers, remove seeds and stem and using nothing other than your fingers slice the meat of the peppers.
With a knife dice onion into quarter/half rings.
Dump these onion and pepper slices with the turkey and use all of the spices (including s&p) to cover the turkey and veggies generously, then drizzle olive oil over all the spices so they're soaked oily.
Mix and enjoy warm with a knife so you can cut turkey meat slices as you eat them.
