Awesome Chocolate Truffles

Bismi-llāhi r-raḥmāni r-raḥīm
In the name of God, the Most Gracious, the Most Merciful.
We came up with this recipe with my partner Daniel a couple years ago:
Ingredients:
4 oz unsweetened 100%chocolate (baker's bars),
4 tbsp grass-fed (Kerrygold's Irish) butter and/or organic virgin coconut oil (if you are vegan or lactose intolerant),
6-7 tbsp raw wild collected/local honey (or pure organic maple syrup)
optional toppings-any or all of:
diced walnuts, diced hazelnuts, shredded coconut, cinnamon, etc.
Put about an inch tall of water in a saucepan. Bring to a boil then reduce to medium heat. Put a thick glass bowl on the saucepan (to turn it into a double boiler) and place 4 oz unsweetened 100%chocolate and 4 tablespoons of grass-fed butter. Mix the two, once they start melting you can reduce the heat to low and continue mixing until they melt entirely. Add 6-7 tablespoons of honey, mix the honey in well and take the glass bowl off the heat. This is when you can test the sweetness of the mix to see if it suits your taste and you can choose to add more honey. When the bowl cools, place bowl in the fridge until chocolate hardens. When it hardens you can scoop it with a spoon and hand roll them into walnut sized balls. You must hurry once the chocolate is out of the fridge as it will start melting very quickly. Simply wait until you're ready to roll them to take the bowl out of the fridge, after the chocolate hardens. You can also roll the chocolate balls in diced walnuts for walnut truffle like chocolate balls. Other toppings could be: diced hazelnuts, shredded coconut, cinnamon, etc.
PS: If you're watching your weight you should watch the amount you eat of this. Although this is a cane sugar-free recipe, honey or maple syrup still have natural sugar in them, albeit nutritious and healthy in moderation.
You can make smaller batches by keeping the same proportions. For example: 1 oz chocolate, 1 tbsp butter and half to 1-2 tbsp honey (depending on how sweet you like it) will yield about 3 balls.
