Fish 'n Chips
The FISH:
8-10 oz (1/2 lb) of your favorite fish steak or fillet (such as salmon or halibut)
organic extra virgin coconut oil for frying (I don't deep fry)
Fish breading:
cassava grits
almond flour
EVOO (olive oil)
fresh ground salt crystals and peppercorns
paprika
if using salmon I'd also recommend ground cumin and coriander
The CHIPS
2 medium or large sweet potatoes or yams, or 1 to 2 - 10oz bag(s) of raw sweet potato crinkles (check to make sure no other ingredients added) (fry this in coconut oil with s&p too)
KETCHUP
add 1 or 2 tbsp of vinegar, and all spices.
add tomato paste and stir/whisk thoroughly. Add additional vinegar as needed to make the consistency smooth and thin like ketchup. 3 tbsp is a rough number -- more might be appropriate.
if the vinegar taste ends up too strong for taste, more water to muddle with honey could be used in place of some of the vinegar.
COLESLAW
shredded white cabbage (or broccoli), red cabbage and carrots (few cups total)
EVOO (olive oil)
fresh ground salt crystals and peppercorns
raw coconut vinegar (or apple cider or white vinegar)
home-made MAYO (1-2 heaping large tablespoons)
MAYO
You probably need a mixer to ensure the emulsification and fluffiness of the mayo
1 egg
1 cup olive oil (light flavor works) or avocado oil
few dashes of vinegar
fresh ground salt crystals
Make sure the egg is warm not too cold. Add all the ingredients except don't add all the oil but a few dashes of it. Make sure the mixer head hugs the egg yolk; start out on low and switch to high within a few seconds. About a minute later add the rest of the oil and keep mixing on high while praying it will solidify :D
