Vegetarian Baked Squash
Modified with inspiration from:

Ingredients:
Green bean threads vermicelli (75-100 grams before boiling) or quinoa (1/2 cup cooked)
1 butternut squash
extra virgin olive oil (or coconut oil)
fresh ground sea salt crystals
fresh ground black peppercorns
1 red onion
1 bunch green onion
3 roma tomatoes
1 bunch of mint (can replace some of the mint with equal amount parsley)
3 eggs
diced garlic (1 teaspoon)
thyme
Directions:
boil green bean threads vermicelli or cook quinoa (1/2 cup cooked)
---> for quinoa I would boil 1/3 cup water and mix in 1/6 cup or about 3 tbsps quinoa with some salt and boil on med/med-low with cover for abt 10 mins until the white spirals come out.
---> for vermicelli I would boil about 1-2 liters water and throw the vermicelli in on high with some salt and perhaps a few drops olive oil, no cover, until it absorbs the water.
1 butternut squash cut in half seeds removed, baked with peel for 30-40 minutes 230C=445F
I bake before peeling to make it easier to peel and chop.
peel and chop in cubes throw back 425 F=220 C with olive oil s&p 10 minutes (do 2 rounds for each half for even layer)
in skillet 1 chopped red onion when it wilts add s&p&1 bunch green onions chopped then add diced garlic (~2 cloves) and thyme (2tsps)
dice 3 roma tomatoes and total of 1 bunch amount mint and parsley mix, spare some mint leaves (about 1/3 or 1/4 of the bunch) separated from stem, chop remainder of stems and leaves of mint and parsley
in large bowl whisk 3 eggs s&p, add boiled green bean threads vermicelli, add 3 roma tomatoes diced add diced parsley and mint and add the red onion mix and the half-baked squash cubes
throw back in oven for 35-40 minutes at 350 F
garnish with spared mint leaves
