Chicken Stuffed Poblano
This recipe slightly modified from, please see link below for pictures and detailed directions:

1.6-1.7 lbs bl/sl chicken-bake 20 minutes until half-done for easy chopping
6 poblano
1 cup salsa-ready made (look for simple ingredients like tomato, onion, garlic, hatch chile and jalapeno peppers, salt, spices--make sure no weird or non-primal ingredients like sugar)
To replace refried beans: mix or shake in jar {bottom of tahini jar (1 tbsp or less) +1.5 cups fried mushrooms (abt 10 larger brown button mushrooms stir-fried in extra virgin coconut oil)+squeeze some lemon juice (less than half a lemon)+sea salt+1/2 tbsp cumin+dash of each: paprika, mexican oregano, chili powder}
Throw stuffed peppers in baking pans greased with coconut oil in oven at 177C for 40-45 mins
For a dairy-free version: when cooled serve with 1 cup cold coconut cream (basically coconut milk w/out the water-but regular coconut milk will also do)
I liked replacing beans with mushrooms since they both have protein and legumes are not Primal. Refried beans can also be replaced with mashed eggplants as described in this link:

{Seriously, roasted eggplants taste very similar to beans, and will take on the flavors and soak up fats just the same. Roast them slowly, peel, mush, cook with whatever fat and tex-mex spice... done.}
