Corned beef and Sauerkraut Canepe
Ingredients:
Almond Crackers
1+3/4 cups almond flour
1 egg (or 2 egg whites)
2 tablespoons olive oil
Fresh ground salt crystals (optionally also rosemary)
Topping
~9 thin slices of corned beef (or other thin cold meat slice) ~6oz
sauerkraut

(Summary is that you mix all ingredients into a cohesive ball then use a rolling pin to flatten it on top of a parchment paper (which you can place on top of a pizza pan for easy transfer from the counter to the oven). You can also make little fork pick marks all along the flattened dough. Throw in the oven at 325F for 10-12 minutes)
Once almond crackers are cooked, fold each corned beef slice in 3-4 layers and place them about an inch apart on the crackers. Top each corned beef with sauerkraut (i find it easier to pick up the right amount without the juice by using chopsticks). Put back in the oven at 325 for 3-5 minutes.
When you take the parchment paper out of the oven cut into pieces such that each piece of cracker has one slice of corned beef on it.
