Sweet Potato Salad
I find this to be fast, healthy, light, can be eaten for breakfast and dinner alike, nutritious and delicious!
any kind of greens mixture (lettuce, baby spinach, spring mix etc, you can also add red cabbage, spring onion, boston cabbage etc...), equal number of tomatoes and baked sweet potatoes (or yams) diced and shredded carrots.
i make large quantities of this mixture and set it aside covered in the fridge to be eaten in several portions (for 2-3 days).
then i take smaller portions of this mixture and add sea salt, balsamic vinegar, olive oil and spices.
i use these spices: oregano, black pepper, cumin, dill weed. one could also use: sumac, mint, thyme, rosemary, etc.
ready to eat cold. bon appetit.
