Imambayildi Stuffed eggplant

Imambayildi means "the imam loved it" :)

Ingredients:
2 eggplants
1 onion
1 bell pepper or 5 sivri or 10 serrano peppers 
3 roma
10-15 baby Carrots
1 bunch Basil or1/4 b  parsley
1.5 teaspoon diced garlic
Fresh S&p
Juice of 2/3to 1 lemon
Bake whole peeled 200C Coconut until soft and drizzle olive oil on top of filling right before putting back in oven 200c 15 mins
