Almost Turkish Leeks

Vegetarian Leeks
Ingredients:
1 onion
3 tbsp coconut oil or butter from grass-fed cows
2 carrots (or 30 baby carrots)
1 lb leeks
2 cups boiling water
1/4 cup (quarter) quinoa
juice of 1/2 (half) a lemon
Quinoa is a pseudocereal, it is higher in protein and lower in carb compared to grains. It also is closer to its wild ancestors unlike commonly used grains who have been extensively genetically modified over history. Quinoa may or may not be Paleo, in either case if you want to be a very strict Paleo dieter keep quinoa and pseudocereal less than 3% of your diet.
